Fresh Parsley1 cup

Garlic2 cloves

Black Pepper, freshly ground1 teaspoon

Olive Oil, divided2 tablespoons

Roma Tomatoes, seeded, cut in half lengthwise8 tomatoes

Parmesan Cheese, shredded2 tablespoons

Cooking directions

  1. Preheat the oven to 325°F. Place parsley, garlic, pepper and 1 tablespoon olive oil in food processor or blender container. Cover and process until just blended. Rub the mixture evenly over all surfaces of the top sirloin roast. Place roast, fat-side up, on the rack in a shallow roasting pan. Insert ovenproof meat thermometer so the tip is centered in thickest part of beef. Do not add water or cover. Roast in 325°F until the desired degree of doneness has been achieved.

  2. Toss the tomatoes with remaining 1 tablespoon of olive oil in a large bowl. Arrange the tomatoes, cut sides up, on a metal baking sheet. Roast in 325°F oven for 30 mins or until the skins are wrinkled and begin to brown.

  3. Remove the roast when the degree of doneness has been achieved and transfer the roast to a carving board, tent loosely with aluminum foil. Let rest for 20 minutes.

  4. Meanwhile, increase the oven temp to 425°F. Sprinkle the tomatoes with Parmesan cheese. Continue roasting an additional 8 to 10 minutes or until cheese is melted and tomatoes are lightly browned. Season with salt and pepper, as desired.

  5. Carve the roast into slices, season with salt and pepper, as desired. Serve with tomatoes.
