RECIPE:Striploin Roast Grilled or Roasted to Perfection

Olive Oilas needed
Garlic Cloves, grated3-4 cloves
Fresh Sage Leaves10 leaves
Fresh Thyme3 sprigs
Dry the roast with paper towels. Place the roast in a roasting pan. Rub both sides with olive oil.
Grate the garlic with a micro plane directly on the meat. Rub the garlic into the roast.
Add the herbs to a small food processor and chop until fine.
Sprinkle the herbs on the roast and rub in well. Make sure you coat both sides of the roast.
Sprinkle salt and pepper on both sides of the roast.
Cover with plastic wrap and refrigerate overnight.
The next day, bring the roast to room temperature for at least an hour before cooking.
For Grilling
Turn the grill on to medium-high heat and allow to get hot.
Place the roast on the grill and sear both sides of the meat.
Turn one side of the grill off and place the seared roast on that side. Reduce the temperature to medium.
Grill for 30 – 45 minutes depending on the degree of doneness you are looking for.
Check the temperature with an instant read thermometer.
Let the roast rest for 30 minutes before slicing.
For Roasting
Preheat the oven to 400 degrees F. Place the room temperature roast in the oven and cook for 10 minutes.
Reduce the heat to 325 degrees F. Roast for another 40 – 50 minutes depending on the desired degree of doneness.
Check the doneness with an instant read thermometer.
Let the roast rest for 30 minutes before slicing.
