RECIPE:Spicy Bison Back Ribs

Vegetable oil1 tablespoon
White onion, small dice1 ½ cups
Minced garlic1 tablespoon
Crushed red pepper flakes1 ½ teaspoon
Chili sauce1 ½ cups
Cold water½ cup
Lemon juice3 tablespoons
Sea salt½ teaspoon
Heat the vegetable oil in medium saucepan over medium high heat until hot.
Add the onions, garlic,and pepper flakes and cook for 4 to 5 minutes or until the onionsare tender.
Add the chili sauce, water and lemon juice and bring to a boil.
Reduce heat and simmer for 5 - 10 minutes, stirring frequently. Season with salt.
Reserve some of the sauce for basting.
Prepare a grill for indirect cooking by lighting half of the grill on high and the other half of the grill on low.
Place the bison ribs, meat side up, in large roasting pan.
Pour the remaining sauce over ribs, turning them to coat.
Cover the roasting pan with aluminum foil and place the roasting pan on the cooler part of the grill.
Close the grill lid and cook for 1 ½ - 2 hours or until the ribs are fork-tender.
Carefully remove the roasting pan from the grill and remove the ribs from pan.
Place the ribs directly on the grill meat side up.
Baste the ribs with any reserved sauce and continue to cook for 15 – 20 minutes basting throughout.
Serve on a platter with your favourite side dish.
