RECIPE:Sirloin Tip Beef Tostadas

Lime Juice2 tablespoons

Ground Cumin½ teaspoon
Garlic Powder½ teaspoon
Black Pepper½ teaspoon
Refried Beans1 (14 oz.) can
Salted Butter2 tablespoons
Cilantro Paste1 (4 oz.) tube
Sour Cream8 oz.
Avocados, seeded and diced2 avocados
Salsa1 cup
Tostada Shells1 package
Combine lime juice, salt, cumin, garlic powder and pepper in a large zip lock bag. Add the sirloin tip steaks and evenly coat with the marinade. Marinate for 2 hours in the refrigerator.
In a pot, warm the refried beans along with melted butter over medium heat. Once heated, set the beans aside.
Combine the cilantro paste and sour cream in a small mixing bowl and whisk thoroughly to incorporate and set aside.
Preheat your grill to high heat. Grill the steak for 3 minutes per side and then transfer the steaks to a cutting board. Rest the steaks for 5 minutes and then dice the beef into ½ inch cubes.
Assemble the tostadas by spreading 2 tablespoons of beans on each shell and then topping evenly with the diced beef. Top the beef with avocado, salsa and the cilantro crema.
