RECIPE:Seared Steak Fajitas

Soy Sauce1 tablespoon
Lime Juice, freshly squeezed¼ cup
Lime Wedges8 wedges
Extra Virgin Olive Oil1 tablespoon
Garlic, minced1 clove
Coarse Salt and Black Peppersprinkle
Green Bell Peppers, seeded and thinly sliced2 medium peppers
Large White Onion, halved and thinly sliced1 onion
Tortillas, warmed8 tortillas
White Cheddar, grated½ cup
Roma Tomatoes, seeded and diced2 tomatoes
Cilantro Sprigssprinkle
In a shallow dish or bowl, combine the steak, soy sauce and ¼ cup of lime juice. Refrigerate for 1 hour rotating the steak occasionally.
In a small saucepan, heat 2 teaspoons of olive oil over medium heat. Add the garlic and cook for 30 seconds. Remove from the heat and stir in 1 tablespoon of lime juice. Set the garlic aside.
Remove the steak from the marinade and blot dry with paper towels. Season with salt and pepper. In a cast iron skillet heat 1 teaspoon of olive oil over medium high heat. Cook the steak until medium rare, about 2 minutes per side. Transfer the steak to a plate and loosely tent with foil.
Add the pepper and onions and season with salt and pepper. Cook until the vegetables are tender crisp. Once cooked, stir in the reserved garlic.
Thinly slice the steak and serve with vegetables, warm tortillas, cheese, tomatoes, and cilantro.
