RECIPE:Seared Inside Skirt Steak with Stir Fry Vegetables

Vegetable oil2 tbsp
soy sauce2 tbsp
fresh ginger, grated1 tsp
beef broth1 cup
cornstarch1 tbsp
onion, thinly sliced1
fresh snow peas1/4 cup
fresh red pepper, cut in large dices½
Chinese cabbage, shredded1/4 cup
fresh bean sprouts1/4 cup
sesame oil1 tsp
green onion, chopped1
sesame seeds, for garnish1 tsp
coarse sea saltto taste
freshly ground black pepperto taste
Cut inside skirt steak into 1” strips and season with salt and pepper.
In a heavy skillet, heat the oil over medium high heat.
Add steaks and sear on both sides cooking for 2-3 minutes per side for medium-rare or until desired doneness. Remove steaks from skillet and let meat rest for 5 minutes.
Add vegetables to skillet and sauté until slightly wilted. Add sesame oil.
In a small bowl, dilute cornstarch in beef broth and pour into skillet. Add soy sauce and beef strips and stir. Add green onions and sprinkle sesame seeds on top.
