RECIPE:Rotisserie Bison Top Sirloin Roast

Kosher salt2 tablespoons
Black pepper, freshly ground2 tablespoons
Granulated garlic2 tablespoons
Olive oilas needed
Remove the roast from the package and pat dry with paper towel.
Drizzle the olive oil over the entire roast and then season with the salt, pepper and granulated garlic.
Attach the seasoned roast to a rotisserie spit and secure with butchers twine.
Preheat a grill for rotisserie cooking with indirect heat at 425 degrees F.
Place a drip pan in the centre of the grill and add the beef broth.
Place the spit on the rotisserie and begin the spinning cycles. Close the lid.
After 30 minutes, turn down the heat to 300 degrees F.
Continue to cook the roast until you have reached the desired degree of doneness.
Once the desired degree of doneness has been reached, remove the roast from the rotisserie and allow it to rest.
Once rested, carve and serve with your favourite side dishes.
