RECIPE:Roasted Turkey Thighs with Cowboy Butter

Sweet potato, peeled and diced3 potatoes
Frozen cranberries1 cup
Garlic cloves, minced8 cloves
Cowboy butter4 oz.
Olive oilas needed
Kosher saltas needed
Black pepper, freshly groundas needed
Preheat your oven to 425 degrees F.
Arrange the sweet potatoes and cranberries in a large baking dish. Drizzle with olive oil and season to taste with salt and pepper, give a quick stir to coat well.
Season the turkey thighs with salt and pepper. Heat 1 tablespoon of oil in a skillet over medium heat and brown the turkey thighs on both sides starting skin side down. Transfer to a cutting board and allow to cool down for a couple of minutes.
Rub the cowboy butter all over the browned turkey thighs. Place the turkey thighs in the baking dish on top of vegetables, skin side up. Evenly sprinkle 1 teaspoon of kosher salt all over the turkey thighs.
Bake the thighs at 375 degrees F for 45 minutes basting the top of the tights with the cowboy butter and pan juices every 3 – 4 minutes.
Remove the thighs from the oven and let the turkey thighs rest for 10 minutes before serving them.
Garnish with fresh rosemary and serve with your favourite side dishes.
