  1. Fresh parsley minced2 cups

  2. Garlic, minced3 cloves

  3. Shallots, minced2 shallots

  4. Red pepper flakes½ tsp

  5. Lemon zest1 lemon

  6. Lemon juice2 lemons

  7. Olive oil1 cup

  8. salt and pepperto taste


Cooking directions

  1. Remove roast from refrigerator and let sit at room temperature for 1 hour. 

  2. Preheat oven to 450 degrees F. 

  3. Place tri-tip on roasting rack. Roast until you have achieved the desired degree of doneness.  Remove from heat and loosely tent with foil. Let rest 15 minutes. 

  4. Prepare the chimichurri while tri-tip is cooking. Chop parsley, shallot, and garlic until finely minced. Mix together in a medium bowl with red pepper flakes, lemon zest, and lemon juice. Add oil and season with salt and pepper. Let sit for 30 minutes to allow flavors to meld together. 

  5. Slice tri-tip against the grain and serve with chimichurri. 

  6. Serve with your favorite side dishes.
