RECIPE:Roasted Rosemary Garlic Whole Chicken

Sweet potatoes, large2 - 3
Butter4 Tbsp
Maple syrup¼ cup
Salt & pepperto taste
Pecans, chopped¾ cup
Pre-heat oven to 400°F.
Pierce sweet potatoes with a fork all over, place on baking sheet and bake until tender, about 1 hour and half.
Place seasoned whole chicken on baking rack and bake in oven until the chicken reaches an internal temperature of 165°F, about 1 hour.
While everything is cooking, in a small saucepan heat the butter over medium heat and brown. Add the maple syrup and salt until combined, remove from heat and cover.
Remove chicken from oven and rest for 10 - 15 mins.
Once sweet potatoes are done, remove the skins and place the insides in a bowl. Add the maple syrup, butter mixture and mash until smooth. Top with chopped pecans.
