RECIPE:Reverse Seared Long Bone Rib Steak

Remove the steaks from the refrigerator approximately 1 hour before cooking to allow the steaks to come to room temperature.
Preheat your grill or smoker to 225 degrees F.
Season your steak liberally on all sides with salt and pepper. Be sure to press the seasoning into the meat with your hands as opposed to just sprinkling them on.
Place the steak on the grill grate and close the lid. Cook the steaks at 225 degrees F until the internal temperature reaches 115 degrees F. Use an internal thermometer to check the temperature.
Remove the steak from the grill and place on a plate. Prepare a cast iron skillet over medium high heat. Place the pads of butter into the skillet. Once the butter is bubbling, it is time to sear the steaks.
Place the steaks in the hot pan of butter and sear each side for approximately 2-3 minutes or until you have reached your desired degree of doneness.
Once the steak has finished searing, remove the steak from the pan and allow it to rest for 10 – 15 minutes before slicing and eating.
