Pork Belly Steak
Chilli Paste10 g
Beef stock2 L
Balsamic Glaze50 ml
Maple Syrup100 ml
BBQ Corn
Corn Cobbs, cut in half5 cobbs
Olive Oil50 ml
Mayonnaise50 g
Buttermilk25 ml
Chili Paste5 g
Parmesan Cheesesprinkle
Pork belly steak
Smother the pork belly with chili paste. Combine the maple glaze ingredients together and add to the pork, cover and bake for 1½ hours at 350 degrees F.
Maple Glaze
Strain the maple glaze from the belly and reduce in a pot until sticky.
BBQ Corn
Blanch the corn, drain, drizzle with a little olive oil and cook on the BBQ. Combine mayonnaise, buttermilk and chili paste and drizzle over the corn. Grate over the parmesan.
