RECIPE:Chinese Style Pork Tenderloin

Kosher Saltas needed

Olive Oil2 tablespoons
Soy Sauce¼ cup
Apricot Preserves¼ cup
Hoisin Sauce1/2 cup
Ketchup¼ cup
Sherry¼ cup
Grated Ginger2 tablespoons
Fresh Garlic1 tablespoon
Sesame Oil1 tablespoon
Five Spice Powder1 teaspoon
Cut Scallions, for garnishas needed
Preheat oven 350°F. Season pork tenderloins on both sides with salt and pepper.
In a large skillet, heat the olive oil over medium heat. Add pork tenderloins and sear on both sides until golden-about 5-7 minutes per side. Transfer to a baking dish, cover with foil and place in the oven. Roast for 20 minutes.
While pork is in the oven, place ingredients for the sauce in a bowl and whisk until blended. Add to the skillet and cook over medium heat until thick and syrupy.
Remove pork tenderloin from the oven, uncover and pour sauce over the tenderloins. Continue roasting uncovered for 10-15 minutes or until you have achieved your desired degree of doneness.
Remove the pork from the oven and place tenderloins on a platter. Slice and serve with sauce from the baking dish over the pork medallions. Garnish with scallions.
