RECIPE:Chimichurri Sauce

Olive oil or vegetable oil¾ cup
Garlic cloves, peeled, whole3 to 4 cloves
Boiling water½ cup
Shallots, Peeled and finely chopped2 tbsp
Red wine vinegar1/3 cup
Lemon juice, freshly squeezed¼ cup
Fresh parsley, roughly chopped½ bunch
Fresh cilantro, roughly chopped½ bunch
Sea saltas needed
Black pepper, freshly groundas needed
Place the oil and peeled whole garlic cloves in a small pot. Place on a burner and warm the oil on medium heat for about 7-10 minutes, until the garlic begins to sizzle. Turn off the heat and remove from the burner to cool.
Combine the boiling water and the Wild Fork Chimichurri Spice Blend into a medium sized mixing bowl and stir to re-hydrate the herbs, about 3-5 minutes.
Remove the cooled garlic cloves from the oil and mash to a paste.
Combine the garlic paste, shallots, red wine vinegar, and freshly squeezed lemon juice with the re-hydrated chimichurri mixture.
Whisk in the warmed oil.
Add the fresh parsley and cilantro and stir to combine all the ingredients.
Taste the mixture and add salt and pepper as needed.
Transfer the completed chimichurri sauce to a food safe container, cover, and store in your refrigerator.
