RECIPE:Chicken Stir Fry with Shitake and Green Beans

Soy Sauce¼ cup
Cornstarch1 tablespoon
Canola Oil4 tablespoons
Green Beans1 cup
Shitake Mushrooms, stems removed1 cup
Garlic Cloves, minced3 cloves
Fresh Ginger, minced1 tablespoon
Jalapeno Pepper, sliced1 pepper
Green Onions, thinly sliced, for garnish2 stalks
Toasted Sesame Seeds, for garnish1 tablespoon
SAUCE:
Chicken Broth½ cup
Soy Sauce4 tablespoons
Chili Sauce2 tablespoons
Sugar1 tablespoon
Cornstarch1 teaspoon
Sesame Oil1 tablespoon
Place thawed chicken strips in a colander and using paper towels, pat dry. Transfer to a bowl and toss with soy sauce. Sprinkle the cornstarch and toss. Set aside.
Heat 1 tablespoon of oil in a large non-stick skillet on high heat. Add a small batch of chicken and stir fry for 2-3 minutes. Transfer to a bowl and repeat with the remaining chicken. Add more oil, stir-fry green beans, add shiitake mushrooms and continue to stir-fry a few more minutes. Add garlic, ginger, and chili pepper and after stir frying for 30 seconds, add chicken back into the skillet.
In a small bowl, combine ingredients of sauce in a bowl. Add to skillet stirring constantly. Bring to a simmer and cook until slightly thickened, about 1 minute.
Transfer to a platter and garnish with green onions and sesame seeds.
