RECIPE:Filet Mignon with Blue Cheese Butter

Coarse Sea Saltas needed
Black Pepperas needed
Olive Oil1 tablespoon
Unsalted Butter, room temperature1 tablespoon
Crumbled Blue Cheese2 tablespoons
Garlic Clove, minced1 clove
Fresh Thyme, chopped½ teaspoon
In a small bowl, beat butter until light and airy.
Add ingredients for flavored butter and mix.
Place in a plastic wrap and roll into a cylinder twisting the ends to seal.
Refrigerate until ready-to- use.
Preheat oven to 400°F.
Heat oil in a sauté pan over medium high temp. When sizzling, sear the filet mignons on one side for 2 minutes. Turn, lower to medium and continue cooking for 2 additional minutes.
Place in the oven and continue to cook for 7-10 minutes or until you have achieved your desired degree of doneness.
Place a slice of the butter on top, cover with foil and let rest for 5 minutes before serving.
